About the wine:
Delicate floral aromas of white peony tea and peach blossom followed by fruity tangerine, honey dew melon, white peach, and a subtle undertone of lychee fruit. The palate reflects the nose with well balanced acidity and juicy fruit. In keeping with our tradition of a unique Gewurztraminer this is on the drier side.
Pair this juicy patio sipper with sushi, Pad Thai, szechuan, roasted ham with scallop potatoes, pork chops, halibut with a macadamia nut crust, or steamed mussels in a thai broth. Also paired with our Boom Boom, Heritage, Pepperoni, and Burrata pizza on the patio.
Winemaking
Our Gewurztraminer grapes are grown by our partner OPG vineyard in Kaleden.
- To extract aromas and flavours from the skins, which we feel is essential in Gewurztraminer, the grapes were lightly destemmed, crushed and cold soaked before being gently pressed.
- The juice was chilled and after settling for 48 hours, racked from solids.
- The clear juice was inoculated with a selected yeast strain and the fermentation was kept cool (12-16°C), lasting 3 weeks. At the ideal sugar / acid balance, the fermentation was halted by chilling and held in stainless steel.
- Once stabilized, the wine was crossflow filtered before bottling.
