About the wine:
Deep straw in colour with enticing aromas of lemon custard, brown butter, and orange crème brûlée. The palate is well balanced and round, with notes of caramel popcorn, toasty almond, and golden delicious apple. This Chardonnay will become richer the longer it ages in the bottle and is perfect for cellaring, but also can be enjoyed now. Pair with hard cheeses like aged cheddar, crab cakes with a white wine butter sauce, moules frites, and oven roasted sunchokes.
Best served slightly warmer to really enhance all of the delicate aromas and flavours. 15-20 minutes out of the fridge will do!

Winemaking:
Our Chardonnay comes from a block in our estate vineyard with a gently sloping western facing exposure that helps produce very ripe, intensely flavoured, bold fruit. Hand harvested and then gently whole cluster pressed, the juice was chilled and after settling for 24 hours, it was racked from solids and transferred to stainless steel for fermentation. After primary fermentation, 50% completed malo-lactic fermentation and was aged for 5 months in new French oak barrels. The wine was allowed to fully complete ML conversion and was then further aged on gross lees for 8 months without lees stirring before being bottled without fining or filtration.
