About the wine:
Initially the nose expresses earthy, farmyard notes which then evolves into vanilla, Amarena and dark cherries, tea leaf. A more robust palate than our previous 2022 vintage with well structured oak and balanced acidity that we’ve come to expect and enjoy from our Pendulum Pinot Noir. Inviting notes of cherry, cranberry, vanilla, dried herbs and forest floor.
Pairings: Perfect pairing with cedar plank salmon or Salmon Lox, pork dishes like pulled pork, pork tenderloin, or pork belly. Also, try casual burgers and BBQ. At the winery it with our Tartufo or Pulled Pork pizzas.
About the label:
Pinot is all about balance, and what depicts that more than a Penny Farthing bicycle? Joel photoshopped the image in front of the McCullough trestle bridge on the KVR trail just below our property.
Winemaking:
- The grapes were harvested by hand before being gently destemmed and left as whole berries.
- The entire production received an extended cold soak in small 1 T fermentations vessels before being slowly warmed to optimal temperatures for a natural indigenous yeast population to begin fermentation.
- Hand punch downs were implemented to keep the grape fermentation cap healthy and also offered careful tannin management of the wine. All of the fermentations were steady, never exceeding 25 C.
- Several days after reaching sugar dryness, the free run wine was drained and the grape skins were gently pressed.
- The wine was then transferred to French oak barrels and a breathable vessel with staves where it slumbered through the winter before malolactic conversion completed naturally in the early months of 2023.
- In summer of 2023, the wine was blended, then racked again before being bottled after light filtering.
