About the wine:

Whoa!  For a delicate wine, there’s a LOT going on in this glass.  Though dry, you may think it’s sweet due to the explosion of so many fruit notes.  Made from 100% Pinot Noir from our first harvest from our McMillan vineyard, it bursts with aromas of alpine strawberries and rhubarb.  On the palate, you may find the flavours change from the moment it hits your tongue through to its long finish.  These may include field strawberry, blood orange, fresh red cherry, guava and papaya.  Enjoy on its own or with medium bodied foods like salmon or pork.

Winemaking: The grapes were hand harvested, destemmed, crushed and left for 3 hours of skin contact before being gently pressed.  The juice was chilled and after settling for 48 hours, racked from solids.  The clear juice was inoculated with a selected yeast strain and the fermentations were kept cool (10-15°C) with fermentations lasting nearly 4 weeks in a stainless steel tank.  At the ideal sugar / acid balance, the fermentations were halted by chilling, stabilized, and crossflow filtered before bottling late January 2021.
