2020 Pinot Noir – Pendulum

About the wine:

2020 was the first vintage of Pinot Noir from our McMillan vineyard on the Naramata Bench. Like our 2019 Pinot, there is an intensity about this wine but it is more subdued than its predecessor. On the palate, there is an abundance of red cherry with an earthiness acting in support of the fruit. The wine finishes with a faint note of brined olives or dill pickles! Consider pairing this Pinot with duck, olive tapenade or grilled meats.

Winemaking: The grapes for the 2020 Pinot Noir were harvested by hand before being gently destemmed and left as whole berries. The entire production received an extended cold soak in small 1 T fermentations vessels before being slowly warmed to optimal temperatures for a natural indigenous yeast population to begin fermentation. Hand punch downs were implemented to keep the grape fermentation cap healthy and also offered careful tannin management of the wine.  All of the fermentations were steady, never exceeding 25 C and several days after reaching sugar dryness, the free run wine was drained and the grape skins were gently pressed. The wine was then transferred to French oak barrels (15% new) where it slumbered through the winter before malolactic conversion completed naturally in the early months of 2021. In early summer of 2021, the wine was blended from barrels, lightly cold stabilized and then racked again before being bottled without using any fining or filtration.  As any premium unfiltered red wine could do, you too can expect a slight amount of sediment to form in the bottle while aging this wine in your cellar.
