About the wine:
Our Midnight sparkling wine is a blend of 70% Riesling and 30% Gewurztraminer. It is slightly off-dry with a hint of sweetness followed by some refreshing acidity. It is a perfect wine to serve with light seafood or chicken or simply drink on its own to celebrate a special achievement!

Winemaking: The Riesling was hand harvested and then gently whole cluster pressed. The juice was chilled and after settling for 72 hours, racked from solids into stainless steel before being inoculated with a selected yeast strain. The fermentation was kept very cool (10-14°C) with fermentation taking nearly 3 weeks. The Gewurztraminer was hand harvested, lightly crushed by foot and then cold soaked before being gently pressed. The juice was chilled and after settling for 48 hours, racked from solids. The clear juice was inoculated with a selected yeast strain and the fermentation was kept cool (12-16°C) with fermentation lasting 3 weeks. At the ideal sugar / acid balance, the fermentation was halted by chilling. Both wines aged on lees for 4 months before being blended, stabilized, crossflow filtered and then bottled via a CO2 injection in mid April 2020.
