About the wine:
Our Pinot Gris is teeming with all things apple – notably apple pie and red apples – with a crisp finish of citrus rind. It shines when paired with cream sauces, cheeses, light charcuterie or fish and chips.

Winemaking: The grapes were hand harvested and then gently whole cluster pressed. The juice was chilled and after settling for 72 hours, racked from solids. Inoculated with a selected yeast strain, the fermentation was kept cool (14-16°C) with fermentation taking 3 weeks. The wine aged on lees for 4 months before being stabilized, crossflow filtered and then bottled in early May 2020.
