2019 Gewurztraminer – Carpe Diem


About the wine:

This wine tastes like ‘love at first sight’ – that moment your eyes met across a crowded room and you knew he/she was the one.  It’s sensual, seductive and elegant expressing rose blossoms on the nose as well as the palate.  Looking a little deeper, you may find ripe nectarine or peaches.  Done in a slightly off dry style to balance a touch of acidity, this is a great patio sipper or a wine you will enjoy with a traditional turkey dinner or spicy foods.

Winemaking: The grapes were harvested by hand, lightly crushed by foot and cold soaked before being gently pressed.  The juice was chilled and after settling for 48 hours, racked from solids.  The clear juice was inoculated with a selected yeast strain and the fermentation was kept cool (12-16°C) with fermentation lasting 3 weeks.  At the ideal sugar / acid balance, the fermentation was halted by chilling.  Once stabilized, the wine was crossflow filtered before bottling in early May 2020.
